Today I made this creamy easy anchovy salad dressing which is delicious on a salad or as a dip for veggies. Yum, yum, yum.
Super easy anchovy salad dressing
- measure apple cider vinegar
- add olive oil
- add anchovies
- add garlic and salt
- blend with immersion blender
Eat more greens with this easy anchovy salad dressing
I am always looking for ways to get more greens into my diet and … not being the biggest fan of smoothies … salads are at the top of my list. Fast and easy are also my priority when it comes to making meals even though you wouldn’t know that lately if you dropped by my kitchen. I feel like I am constantly preparing food … oh, to be able to phone up and order a pizza, or pop into a restaurant and eat whatever I felt like or buy something ready made from Costco. Am I whining? Well … yes … I guess I am.
Oh well … I am feeling sooo much better … I just have to hang in there. Stick with the autoimmune protocol, right? Tomorrow is another day.
Easiest, creamiest salad dressing ever.

1/4 cup apple cider vinegar
1/2 cup olive oil
2 anchovy fillets
1 small clove garlic, minced
1/8 teaspoon salt or to taste
romaine, torn or chopped
2 tablespoons or so fennel fronds, chopped
long English cucumber, quartered lengthwise and sliced
red cabbage, chopped
green onions, chopped
Add apple cider vinegar, olive oil, anchovies, minced garlic and salt to a measuring cup (see tip).
Use an immersion blender to emulsify these ingredients.
Assemble romaine, cucumber, green onions, red cabbage, blueberries and fennel.
Top with dressing.
Be sure to use a deep and narrow jar or measuring cup so that the immersion blender has enough room to do its work and not spray salad dressing all over you and the kitchen!
