These AIP coconut date squares are quick and easy: throw dates, coconut and raisins into a food processor, spread coconut butter in between two layers. Deliciousness!
Before I started the autoimmune protocol I made an almond, walnut, raisin, date square and topped it with melted dark chocolate. At this point in my healing journey I can’t eat this (sigh) so I thought that I would make a similar square using coconut and coconut butter (see my recipe for how to make your own decadent coconut butter).
Eating sweets often is not recommended on the autoimmune protocol because consuming large quantities of sugar, from whatever source, can impact your healing. See the science behind this at the Paleo Mom. The idea is to have these in the freezer and eat one now and again as a treat, not an everyday thing.
AIP coconut date squares and weight gain?
Since implementing the autoimmune protocol I have lost close to 15 pounds even though I have been eating plenty of healthy fats like avocado and coconut, eating nutrient dense foods and increasing the volume of food that I am eating. Recently a friend said to me “Margaret, I have never seen you eat so much!”. I may not be continuing to lose weight but I am not gaining it back either.
If I don’t overdo these coconut date squares they should help to bump up my calorie consumption and stop the weight loss. Stay tuned.
Food to Heal Ourselves
These squares are a no bake treat that are quick and easy to make using a food processor.

2 cups medjool dates
3 cups coconut (unsweetened flakes)
1/3 cup orange juice
1 cup currants or raisins
1/8 teaspoon salt
1/2 to 3/4 cup coconut butter
1/4 cup coconut milk
Pit the dates and measure two cups, softly packed.
Add dates to a small bowl and pour boiling water over them to soften.
Drain the dates and sprinkle with 1/8 teaspoon salt.
Put coconut in the food processor and process a bit if it is a fancy shred.
Add orange juice to the food processor and pulse a few times to mix.
Add currants or raisins to the food processor and pulse a few times.
Add drained dates to food processor and process on low or pulse until incorporated into coconut mixture.
Soften coconut butter in a hot water bath.
Mix with coconut milk.
Put half the coconut date mix into an 8X8 pan.
Pat down firmly and evenly and then smooth with the back of a spoon.
Pour the coconut butter/coconut milk on top of the packed coconut date mix and spread evenly.
When the coconut butter mix is soft but no longer runny carefully sprinkle the rest of the coconut date mix evenly over the top.
Press the coconut date mix into the coconut butter mix and then smooth with the back of a spoon.
Refrigerate (can be frozen).
1. Freshly squeezed orange juice has a nice flavor and likely has more vitamin C.
2. It is important to press the top half of the coconut date mixture into the soft coconut butter mix so that both halves of the square adhere to the coconut butter in the middle.
